Boiled Southern Cabbage

head of Cabbage3 Medium size Potatoes4 slices bacon5 tablespoons ButterSalt Pepper6 cups Water
Slice the bacon in to 1/4 to 1/2 inch strips. Peel and wash Potatoes then cut into one inch chunks. Add bacon to large pot and heat. Cook until the bacon is cooked but not crispy. Add 6 cups water and Potatoes. Cut the Cabbage up until it is about two inch or so slices or any size you are comfortable with eating later. Add cabbage to Pot. Add the Butter, Salt, and Pepper and Stir and Cover Pot and cook for about 15 mins on medium heat. Stir pot lower heat to between low to medium heat and heat for about another 30 mins or until potatoes are soft and the cabbage is wilted down. Sometimes I shut it off when the potatoes are done because i like the Cabbage still a little crisper. Serves any where from 8-16 people depending on whether you serve one or two cup servings. I based the recipe on one cup Servings. This meail is good served with any meat or standing alone with a little bread. Enjoy.
