Spanish Rice (Dr. Weil)

Ingredients
1 Tbs Olive Oil1/4 C chopped onion1/4 C chopped celery1/4 C chopped tomatoes1/8 t sp cayenne pepper1 Tbs paprika1 1/2 C brown rice3 C Chicken or Veg Stock (I use low sodium)1/2 tsp salt (I omit)
Directions
Heat olive oil in a big pot over low heat, add onions, celery, tomatoes and saute stirring for 3 minutes. Add the spices, rice and stock. Cover and bring to a boil; reduce heat and simmer covered for 45 minutes.
Makes 6 servings.
