Beef Stew

Ingredients
2lb Beef stewing steak (lean) cubed5 medium potatoes peeled and diced2 cups carrots chopped1 cup diced leeks1 cup diced onion3 large parsnips dicedhalf a large swede diced4 dessert spoons gravy granules to thicken1 oxo cube (mixed with pint of water)Salt and PepperMixed herbs (optional)
Directions
Soften onion in a pan with a drop of stock.
Add the meat, leeks and seasoning. Leave to simmer for 2 hours.
Add the potatoes, carrots, parsnip and swede and simmer for a further 2 hours.
Stir in the gravy granules to thicken the stock.
Serve
