Skinny Crepes

4 egg whites, at room temperature1 cup fat-free (skim) milk1/2 teaspoon vanilla extract1 tablespoon powdered (icing) sugar1 cup all-purpose flour1/2 teaspoon salt1 teaspoon baking powder
Makes 14 crepes to serve 7 (2 each!)
In a blender, whiz around the 4 egg whites until frothy. Add in milk (can use soy), vanilla and powdered sugar. Whiz around again.
Add in flour, baking powder and salt. You got it: whiz around, but just for a bit - just till everything's mixed, otherwise your crepes will be tough and rubbery.
*Refrigerate batter for 30 minutes.*
Spray a non-stick pan with cooking spray, or wipe with a small amount of oil. Pour in a little of the batter; gently tilt the pan all around to distribute the batter. When browned on bottom, flip over to brown the other side.
*serve with some fresh blueberries and yogurt - yummm!
