Slow Cooker Chicken Korma Curry

1 box Shan Korma Curry Mix (1.75 oz.)9 oz. Whole Cashews2 bags DelOroBlend, Publix Frozen Broccoli, Carrots, and Cauliflower (16 oz. each)2 cans Hunt's Petite Diced Tomatoes, 100% Natural (28 oz. each)3 lb Frozen Boneless, Skinless Chicken Breasts1 cup Light Sour Cream3 tbsp Minced Garlic in Oil3 tbsp Curry Powder (or to taste)1.5 tsp (or to taste)
Cut frozen chicken into bite sized pieces.
Place into 6-quart slow cooker with all ingredients, EXCEPT cashews and sour cream.
Cook on high for 4 hours or low for 8 hours.
Add sour cream and cashews during last hour.
I like to serve it over Basmati rice (not included in calorie count).
Makes 24 one cup servings.
