Cat's Smothered in Onion and Mustard Pork Chops

2- 3 oz boneless tenderloin pork chopsdash saltdash pepper2 tsp flour1 Tlsp olive oil1 medium onion, diced1 Tlsp grainy mustard1 cup low sodium chicken broth1 tsp dried dill
Season the chops with salt and pepper and dust with flour.
In medium skillet, heat the olive oil. Add the chops and cook over high heat,turnning once, until lightly browned, about 3 minutes. Transfer pork to a plate.
Add the onion to the skillet, cover and cook over moderate heat, stirring occasionally, until softened, about 10 minutes.
Stir in the mustard and 1 tsp flour and cook for 1 minute.
Add the chicken broth and bring to a boil.
Nestle the pork in the onion sauce.
Cover and simmer over moderate heat until the pork is cooked through, about 5 minutes.
Transfer the pork to plates and stir into the sauce the dill. Spoon over the chops.
