Meatless Moussaka

Ingredients
Cut the Eggplant in 1/2 inch circles and grill on a teflon griller. Saute the onions carrots and mushrooms in oil until onions are soft. Add the can tomatoes and can lentils. Add 2 tsp of cinnamon, 1tbsp oregano and the vinegar. Cook on top of stove while making the white sauce. Place butter in microwavable bowl, micro 1 minute until melted add flour and stir and micro 30 sec. Add some milk stir until there are no lumps. Add the rest of the milk microwave in one minute segments stirring in between.Remove when sauce is thick, add the parmedsan cheese and stir in to melt. Add the egg and beat in so as not to cook it. Assemble the 3 parts. pLace the vegetable sauce on bottom ot a cassorole, layer with the eggplnt and pour the white sauce on top. Cook in 400 oven 30 -45 minutes. Let sit in ove about 20 minutes before serving.

Serves 6 as a main dish.
