Ingredients
1- 15.5 oz can blackeye peas, drained & rinsed1- 11 oz can white shoepeg corn, drained & rinsed1.5 c. chopped green bell pepper.5 c. chopped leeks (greens only)2-3 roma tomatoes, chopped1 small to medium avocado.5 c. fresh cilantro, chopped.5 c. red wine vinegar.33 c. olive oil2 tsp minced garlic.5 tsp salt.5 tsp ground black pepper
Directions
Add dressing ingredients to a jar and shake well to mix:

red wine vinegar
Olive oil
garlic
salt
black pepper

Set aside

In large mixing bowl mix together vegetables:
blackeye peas
shoepeg corn
avocado
tomatoes
green pepper
leeks
cilantro

Shake dressing mixture and pour over veggies, mixing well

Marinate 6-8 hours (or overnight)

Enjoy alone or with tortilla or soy chips!
