Crepes For All

Ingredients
2 cups white flour1/4 cup unsifted powdered sugar4 large eggs2 cups vanilla soymilk2 tsp vanilla extract1-1/2 tbsp unsalted butter1/4 tsp salt
Directions
Combine all ingredients in a blender.
Heat a skillet with 1 tbsp of canola oil.
Pour in the batter so that it evenly covers the skillet in a thin layer. When it appears to be firm on one side or golden brown, turn over.
Once golden brown on the other side, remove from heat.
Repeat until the batter is gone.
When the crepes are finished, they should not be too sweet. Now, they may be made sweet when combined with jam, fruit, and/or sugar; or they may be savory when used with things like goat cheese, ham, spinach, etc.
Try it however you like, but don't forget to track it!
