East Stuffed Portobella Mushrooms

Ingredients
8 med-lg size portobella mushrooms3 lg tomatoes4-5 sprigs fresh cilantro (coriander)5 sm-med size shallots or 1-2 bunches green onions200 gr skim-mozzarella
Directions
-Pre-heat grill/fry pan/oven to approx med-high.
-Wipe portobellas clean and remove stem.
-Grill mushrooms stem side down for approx 5 mins (will be starting to release juices), set aside non grilled side down
-dice cilantro, shallots/onions and tomatoes and mix together, salt and pepper to taste
-divide tomatoes mixture into 8 equal portions and fill mushrooms (mixture will go onto the previously grilled side)
-grate cheese and divide equally over all mushrooms
-grill mushrooms and cover to melt cheese

serve as is or cut into quarters for bite sized appetizer!!
