Cream of Asparagus Soup

Ingredients
4 TBSP butter1 large onion1 pound asparagus - cut5 TBSP flour6 cups vegetable brothnutmeg/paprika/lemon juice/pepper1/2 cup fat free half and half
Directions
saute butter and chopped onions till clear
add cut up asparagus - cook 8 -10 mins
add flour - stir
add broth
sprinkle nutmeg, paprika, lemon juice & pepper
bring to boil - reduce to simmer for 25 mins
add half and half
puree through blender - leaving some asparagus whole if needed

    No need to add the half & half - I cooked the asparagus w/ a chopped potato, sautéed onion & celery & when blended, it's so delicious, I could serve without the half & half. And quick too! - 4/27/14

    Very good soup!! I used Low Sodium Chicken broth instead of vegetable since it's what I had and sprinkled pepper, lemon juice, chives and sliced garlic on the soup.

    We live out of the USA right now and my husband has been missing c of a soup! This was a great! I added 3 cloves of garlic and substituted plain yogurt for the cream because cream is not readily available here. Also used fresh AND canned c of a soup since I didn't quite have enough fresh - yummy! - 4/26/10
