Fresh Ginger Snaps

Ingredients

1.5 cups sunflower or canola oil2 large eggs2 cups brown sugar0.5 cups unsulfured molasses4.5 cups unbleached flour2 tbsp ground ginger1.5 tbsp baking soda1 tbsp cinnamon1 tbsp clovest teaspoon salt
Mix oil, eggs, sugar and molasses in a bowl. Hand mix other ingredients in a separate bowl and add to oil and egg mixture. Mix until a silky dough is achieved. Cover and refrigerate overnight.
Preheat oven to 350. Roll dough into a ball in the palm of your hands. Toss in granulated sugar. Bake for 8-10 minutes.
(instead of refrigerating the dough overnight, I usually roll the balls right away and then store in a freezer bag in the fridge - the next day I put the bags in the freezer - I then bake a few from frozen whenever I need some)
