Golden Chicken Curry

12 oz. of boneless, skinless Chicken Breast 2 Tsp Siracha Chili Sauce1 Tbsp Butter1 Small Onion1/2 Cup assorted Bell Peppers (I like the color they add), cut into bite sized pieces1/2 Cup Zucchini, sliced1/2 Cup Summer Squash, sliced1/4 Cup Golden Raisins1/2 Cup Skim Milk1/2 Cup Fat Free Chicken Broth2 Tbsp Curry Powder1 Tbsp Corn Starch
Chop chicken into cubes, toss with siracha chili sauce, cook in non-stick skillet. Set aside.
In a larger pan, sautee the onion, peppers in the butter until soft. Add the corn starch, salt and curry powder.
Stir in the milk and the chicken broth, bring to a boil until sauce has thickened.
Add the remaining vegetables, chicken, raisins and cook until heated through.
I serve as is, but I'm sure would be great with brown rice, and/or some naan. mmm
