Leann's Simple Cranberry Vinaigrette

*Knudsen Just Cranberry Juice, 1 cup * Granulated Sugar, 3 tsp * Cider Vinegar, .25 cup * finely chopped shallot, 1 Tbsp *Canola Oil or olive oil, 1 cup * Salt, 1 dash
I start the cranberry juice and sugar in a saucepan and reduce by about half.
Then I add the vinegar (Balsamic will work nicely, too) and shallot
Then I vigorously whisk the canola oil (you may not need the whole cup just use until it is the taste you want) slowly into the vinegar, shallot sugar and juice mixture to fully emulsify (suspending the two together to incorporate)
I then add a pinch of salt to taste. Test it by dipping a leaf of lettuce in it to get a good balance.
1 serving is 2 Tbsp
