Kim's Dairy Free Enchiladas

Ingredients
Ground BeefGround TurkeyTaco SeasoningWaterOlive Oil OnionsRed PeppersCanned Green Chili'sLa Victoria Enchilada Sauce (Red or Green or Both)Flour Tortillas ( 10 inch work best)
Directions
Makes 14 enchiladas.

Prepare the beef and turkey according to the directions on the taco seasoning packet. In a separate pan, sautee the onions and red peppers in olive oil to soften. Pre-heat oven to 350. In two or three pyrex baking dishes pour just enough enchilada sauce to cover the bottom. Once meat and veggies are prepared scoop meat then veggies into tortillas and roll. Lay into baking dishes but don't pack too tightly. Once baking dish is full, cover with a mix of green and red enchilada sauce. Bake for about 20 minutes. If you are adding cheese, add a layer on top of tortillas and then add enchilada sauce and top with a final layer of cheese.
