Banana Cream of Wheat Mini Muffins

Ingredients
1 cup cream of wheat1 cup cornmeal1 cup Splenda2 eggs1.5 cups skim milk3 mashed bananas1/2 teaspoon salt2 teaspoons cinnamon2 teaspoons vanilla
Directions
Preheat oven to 400 degrees. Mix all ingredients together with spoon, just until mixed. Pour into sprayed mini muffin tins, filling almost full. Bake approximately 10-14 minutes or until middle of muffins are firm. Let cool slightly and remove from pan. Freeze as soon as they are cool to retain freshness. Best if warmed in microwave just before eating. Makes 30 - 36 mini muffins.
