Ingredients
3 lb rump roast1/2 red onion, chopped3 cloves garlic, minced8 red potatoes, cubed4 carrots, chopped2 stalks celery, diced1/2 cup portabella mushrooms2 sprigs thyme6 oz red winewaterSalt and pepper to taste
Directions
Preheat oven to 325.

Brown meat in a dutch oven about 5 minutes on each side. Place remaining ingredients into dutch oven and cook for 3-3 1/2 hours, until meat is tender.
