Curry chicken with tomatoes

1 1/2 lb onions, diced1 1/2 C chicken broth1 1/2 tbl curry powder1 1/2 C tomato pureesalt to taste3 # boned and skinned chicken breasts, diced1 C hot water3 C cooked enriched rice
Place onions, broth and curry powder in a large skillet with lid and cook, covered, over low heat for 10-15 mins. Add tomato puree and salt. Stir to combine. Pace chicken in sauce; stir sauce over chicken; cook, covered over medium heat, turning occasionally until chicken is done about 15 mins. Add water; stir to combine; replace cover and cook over low heat for 5 minutes. Serve over rice. Makes 8 servings
