Vegetable Soup - P90X

Ingredients
Swanson's chicken broth low sodium and fat free, 10 cups4 medium red potatoes, cut into 1" cubesOnions, raw, 4 cups, quartedCarrots, raw, 1 cups, sliced 1" thickCelery, raw, 1 cup, sliced 1" thickZucchini, 2 cup, sliced 1" thickTomato Sauce, 8 ounces, cannedGarlic, 2 cloves, mincedParsley, 1/4 bunchCilantro, raw, 1/4 bunchPepper, black, 1 dash
Directions
In a large stockpot, combine the chicken broth, potatoes, onions, carrots and celery. Bring to a boil, reduce heat to medium-high, and simmer until the potatoes are tender, about 30 minutes.

Add the zucchini, tomato, garlic, parsley, and cilantro. Reduce heat to medium-low and cook for 10 - 15 minutes more, or until the zucchini is just tender. Season to taste with black pepper and serve.

If desired, add protein powder just before serving.
