Tomato & Basil Soup

500g Passata14 Tomatoes (quartered pulp removed)1/2 red onion1 tablespoon olive oil15 Basil Stalks leaves removed for garmish1 Teaspoon Balsamic Vinegar1/2 tablespoon red wine vinegar10 grams tomato purree300ml beef stockSalt and Pepper
Fry Onion and basil stalks in olive oil untill soft
Add fresh tomatoes, Balsamic vinegar and a little salt and pepper, cook untill tomatoes are soft
Add Pasatta and half the basil leaves (roughly sliced) bring to a simmer.
Blitz with a hand blender untill really smooth, add the rest of the freah basil and ajust the seasoning.
