Ingredients
2 chicken breasts1 can kidney beans/ drained/ mashed2 c sargento lowfat mexican cheese1/2 c salsa or enough to make filling stick together1 low sodium taco seasoning mix 24 yellow corn tortillas extra thin
Directions
Cut chicken in small pieces and cook in skillet with Pam until almost done add taco seasoning mix and finish cooking until done. Mash Kidney beans while chicken is cooking. Run chicken in food processor to make smaller bits. All all other ingredients except tortillas until it holds together on its own. Put tortillas in microwave for 60 seconds this will soften them and warm making it easier to roll. Put filling in tortilla and roll up and secure with toothpicks. Spray with Pam and lightly salt. Bake at 400°F for 20 minutes, or until they are crispy on the outside. Dip in fat free sour cream or salsa. Enjoy!
