Apple Celeriac Remoulade with Crab

Ingredients
Juice of 2 lemons1/2 cup light mayonnaise4 tsp dijon mustard2 tsp whole grain mustart2 tbsp minced parsley or chervil8 cups grated celeriac (celery root) - about 1 large2 granny smith apples, grated16 ounces lump crab meat
Directions
In a bowl, whisk together the lemon juice, mayonnaise, mustards, parsley and salt and pepper. Toss the celeriac and apple with the remoulade sauce as soon as they are grated to prevent browning. Stir in crab meat and serve. Makes 4-6 servings.
