Ingredients
3 Leeks15 Mushrooms1 Onion2 cloves Garlic8 cups Beef Broth
Directions
Clean and chop Leeks, Mushrooms, Onion and garlic. Sauté until tender. Add beef broth and cook until flavors are well blended. Thicken if you like, or serve with thin broth. Makes 8 appetizer size servings, or 4 lunch size servings.

    thickened with 2 tb. cornstarch slurry which was 1/4 cup water and 2tb. cornstarch whisked together before adding to soup and whisking for 5 min. - 11/16/10
