14-16 cooked manicotta shells250 g (about 2 cans) fresh or frozen crabmeat, flaked (can be artificial)20 oz. frozen spinach, thawed and drained1 1/2 cups ricotta cheese1/2 cup grated parmesan cheese1/2 cup chopped green onions1 large egg, beaten1 tsp. salt1 can of your favourite pasta sauce - I like Hunt's Thick & Rich Roasted Garlic
Preheat oven to 400F. Cook manicotta shells as directed on package and set aside. Spray a 9x13 baking dish with Pam.
In a medium bowl, combine crab, spinach, cheeses, onions, egg and salt. Mix well. Use a spoon or your fingers (Julia Child says it's ok) fill shells and place in dish. Cover with sauce.
Bake uncovered, until bubbly, about 25 minutes.
