About 5 4oz chicken breast14 -15 corn tortillas3/4 cup yogurt (about 1 Tbsp for each taco)2 cans La Victoria Green Enchilada SauceAbout 130 g of mozzarella cheese
Cook chicken in desired seasonings. I like goya adobo.
Tear apart chicken.
Roll about 1/3 chicken breast, 1 Tbsp yogurt, and about 1 tbsp cheese into one tortilla. You can drizzle just a little sauce on the inside if you like. Pour 1/3 to 1/2 of sauce on into casserole dish. Lay tortillas side by side in a pan, it's ok if they squish together some. Keeps them rolled. Cover with the rest of sauce. Sprinkle with any remaining cheese. Bake for about 30 min. at 350. Enjoy.
Makes about 10 servings of 1 1/2 enchiladas each.
