Picnic Potato Salad

Ingredients
4 Large White Potatoes5 Tbsp Light Mayonnaise4 Tsp Dijon Mustard1/2 Cup Celery, diced small (or to taste)1/2 Cup Onion, diced small (or to taste)2 Tbsp Pickle Relish (or to taste)Salt, Pepper (to taste)
Directions
Serving Size: 1 Cup

Wash, de-skin, and cut potatoes into cubes. Boil until you can place a fork into potato (but not as soft as you would mashed potatoes). Drain and place potatoes into a large bowl.

Add Lt. Mayo, Mustard, Celery, Onion, Pickle Relish and Salt and Pepper to Potatoes. Stir all together. Cover and chill for at least one hour.
