Ingredients

    2 cups asparagus tips, diagonally cut
    1/2 cup plain, non-fat yogurt
    1 teaspoon curry powder
    1 teaspoon fresh lemon juice
    1/4 teaspoon salt
    1/8 teaspoon fresh ground pepper
    12 ounces cooked skinless, boneless chicken breast, chopped
    1/2 cup red bell pepper, seeded and chopped
    1/4 cup fresh cilantro, chopped
    2 tablespoons sliced almonds, toasted
    spinach leaves

Directions

1. Steam asparagus for 2 minutes or until crisp-tender.
2. In a medium bowl, whisk together the yogurt, curry, lemon juice and salt.
3. Add asparagus, chicken, bell pepper, cilantro and almonds and toss to coat.
4. Serve over spinach.
Serves 4.

    Very tasty- the kids and hubby ate every bite too. Next time grapes or apples sound like a good idea, and upping the curry taste also. I will serve the cilantro on the side, though.. not everybody is as crazy for it as I am!! - 8/17/08

    It sounds very good but the nutritional facts dont add up. I went through the information you provided and recaculated as best I could and the sodium/cal/fat and cholesterol were all higher then reported. Its still wouldn't be a un-healthy recipe but its always best to know exactly what your eating. - 6/14/09

    Outstanding! Very satisfying and tasty! I added a handful of seedless grape halves, or your could use diced apples or mandarin oranges too. The calorie count is low enough that even by adding a fruit you are good to go. - 4/14/07

    This is absolutely delicious. Due to a lack of ingredients, I used cumin and coriander for the curry powder and fat free sour cream instead of yogurt. One of the best home cooked meals I've ever had! - 12/10/09
