Morracan Stew w Lentils

Ingredients
2 medium onion chopped2 cups celery, diced3 cloves garlic1 tsp curry powder (optional)1 tsp cumin1 tsp ginger1 tsp cinnamon Large bunch of cilantro, chopped2 cups chopped tomatoes1 cup chicken broth1/2 cup water1 cup lentils rinsed and drained1/2 cup raisins or craisins1 large sweet potato cubedBunch of mint
Directions
1. Cook onion & celery until tender, stir in garlic and spices and cook for 1 minute.

2. Add tomatoes, chicken broth, water, cilantro, lentils, raisins and sweet potato. Cover & bring to a boil. Reduce heat to medium and cook for 10 minutes or until potatoes are cooked.

3. Stir in mint and serve.

Makes 9 1-cup servings.
