Introduction

Ingredients

    For one cookie sheet size pizza use:
    Jenny's Whole Wheat Pizza Dough RECIPE (View Recipe Here)
    1 (7.5 ounce) can pizza sauce
    1/2 tbsp. olive oil
    black Pepper to taste
    1/4 cup onions, chopped
    1 red bell pepper, chopped
    6 cloves garlic, chopped
    2/3 cup sliced mushrooms
    1 cup spinach, fresh, torn
    1 large tomato, chopped
    2/3 cup black olives, sliced
    1/2 cup feta cheese, crumbled
    2 cups mozzarella cheese, shredded
    1 tsp. canola oil

Tips

You can also make this into individual size pizzas.


Directions

1. Pre-heat oven (375F).
2. Using a large skillet or wok (I prefer the wok), saute all the vegetables for a few minutes(except the spinach and tomatoes) in the 1/2 tbsp. of olive oil with a bit of black pepper.
3. Add the tomatoes and spinach, and saute for a minute or two more, or until the spinach wilts and shrinks down a bit. Remove vegetables from the heat.
4. Roll the pizza dough out onto a large, OILED cookie sheet.
5. Spread the can of pizza sauce on the prepared pizza dough.
6. Add a bit of the shredded mozzarella cheese to the prepared crust.
7. Evenly spread the sauteed vegetables over the crust.
8. Spread the black olives over the crust.
9. Crumble the feta cheese evenly over the crust.
10. Top with the remaining mozzarella cheese.
11. Bake in the pre-heated oven for 11 - 13 minutes.
12. Remove from oven, let stand a few minutes, and slice into 16 equal pieces.

    To find the crust recipe, you can do a search in the search engine for Jennys whole wheat pizza crust, or just click on "curves_n_curls" name next to "submitted by" and it will show all the recipes she's submitted. It's in there too. I was able to find it both ways so whatever is easier for you. - 11/1/08

    Too good to pass up.
    For those of us who prefer ounces...
    2oz onion
    4oz Feta
    6oz of Red Pepper(1 lg)
    6oz tomato (1 med)
    6oz black olives( 1 can drained)
    5.5oz of spinach (this is 1 bag fresh)
    6oz mushrooms, I went ahead & used the entire 8oz container of mushrooms

    I would like to have the ingredient calculations in standard measurements rather than grams. This recipe looks good, but I don't want to take the time to figure out the conversions. Thanks. - 4/8/09

    it sounds great. we use Trader Joe's whole wheat pizza dough all the time and it's about the same nut. value. Don't ya just hate doing the conversion things?! I bet it's be great with roasted red pepper from a jar too! - 5/21/08
