2table spoons oliveoil.,4large red, yellow or orange bell peppers cut into thin strips.,2cloves garlic chopped.,12 pimiento- stuffed green olivesor pitted black olives, cut into halves.,2to three table spoons whitewine or red wine vinegar.,1/4 teaspoon salt and black pepper.
1.Heat olive oil in 12-inch skillet over medium- high heat.Add bell peppers; cook and stir 8 to 9 min or until edges begin to brown.2.reduce heat to medium.Add garlic; cook and stir 1to 2 minutes.DO NOT ALLOW GARLIC TO BURN.Add olives vinagar salt and black peppers.Cook 1to2 minutes or until all liquid has evaporated....Can be served hot as a condiment with meat dishes.Or it can be chilled and served as part of an antipasti selection. It also make a great side dish.
