Refreshing Lemon-Arugula Asparagus Salad

Ingredients
Bunch of arugula, lemon, olive oil, salt and pepper to taste, 6 pieces grilled asparagus, cut into 1" pieces
Directions
Grill asparagus--many options for this, I cut it up into 1" pieces and cook it in a skillet sprayed with Pam.

Wash arugula and put in a bowl

In separate bowl, make dressing by combining olive oil, juice of 1/2 lemon, and salt and pepper.

Toss arugula salad in dressing, add asparagus.

Warm asparagus will wilt the arugula.

Serve over (or under) grilled fish or chicken, if desired.
