Potato Leek Soup

Ingredients
4 cup leeks, diced (incl. tender greens)4 medium potatoes diced2.5 quarts water1 T. sea salt
Directions
Dice vegetables.

Set to simmer with water and salt, partially covered, for approx. 60 minutes. Let cool 10 minutes. Blend with immersion blender or in batches in blender or mash with fork or food mill.

Serve.
