Orange-Pistachio Wild Rice Salad

Ingredients
FOR SALAD:2/3 c brown rice2/3 c wild rice3 c low-sodium chicken broth1 orange, peel & Pith removed, segmented and sliced10 large basil leaves, sliced into ribbons1/4 c minced red onion3 tbs chopped pistachios, lightly toasted1 tsp finely grated orange zestDRESSING:1/3 c red wine vinegar1/4 c olive oil1 tbs orange juice1/5 tsp Dijon mustard1 tsp honey1/4 tsp salt
Directions
Combine brown rice, wild rice & chicken brother in a saucepan and bring to boil. Cover, reduce heat to simmer & cook until all water is evaporated and rice is fully cooked, about 45-55 mins. Remove from heat and cool completely.

When rice is cool, add orange slices, basil, red onion, pistachios & orange zest; mix to incorporate.

Combine red wine vinegar, olive oil, orange juice, mustard, honey and salt in a metal bowl and whisk to incorporate.

Pour over rice mixture and toss to incorporate.
