Baked Avocado & Cheese Sandwich

2 Tbsp Garlic Mayo1 Tbsp prepared horseradish2 tsp onion, minced1/2 tsp poppy seed4 slices sun-dried tomato bread (or rye or whole wheat)4 1/4 inch thick slices smoked Cheddar, mozzarella, or Gouda (about 4 ozs)4 1/4 inch thick avocado slices4 1/4 inch thick tomato slicespepper to taste
Preheat over to 350.
Make the spread: Stir all ingredients together in a bowl.
Generously spread one side of each bread slice with the may mixture. Layer with slices of cheese, avocado, and tomato; lightly sprinkle w/ pepper. Top with the remaining 2 bread slices, spread-side down.
Wrap each sandwich in aluminum foil. Place the sandwiches on a baking sheet and heat in the oven for about 15 minutes, or until the cheese is melted.
