Mexican Brown Rice

Ingredients

1 1/2 cup brown rice2 tsp olive oil3/4 cup chopped onion2 cloves chopped garlic1 green bell pepper, diced1 yellow bell pepper, diced1 can Rotel1 can tomato sauce3 cups water
In large skillet, saute onion, garlic, and bell peppers in olive oil for a minute or two.
Add rice and stir to keep from over browning.
When browned, add Rotel and let simmer 1 minute.
Add tomato sauce and water and stir.
When boiling, reduce heat to medium-low and place lid on pot.
Let boil 45 minutes, or until water has cooked out.
Makes 8 servings.
