Introduction

This is a GREAT snack that won't hurt your nutrition plan! It's easy to make and can be eaten with baked tortilla chips, as a veggie dip, or mixed in with salads. Ingredients

    1 16-oz can of black beans (drained and rinsed)
    1 11-oz can of corn (drained)
    1/2 cup of salsa
    2 TBSP of lime juice
    1 TBSP (or more) of fresh chopped cilantro
    1/4 tsp (or more) of Tabasco sauce
    optional: chopped green onions

    note: cilantro and Tabasco have no calories, so use them liberally according to taste.

Directions

1. Drain and rinse the beans. In a medium sized bowl, mash the beans up slightly with a fork.

2. Add all the other ingredients and mix.

Makes 4 delicious servings.

    i tried this recipe and loved it. the only variations i made were to use fat free refried beans (fewer calories) and 4 Tbsp salsa instead of just 2. Oh, and I used powdered lime seasoning rather than the real thing since i didn't have any limes around.
