Lentil Lasagna (from weight watchers cook book)

note:garlic cloves = choppedcanned tomatoes = diced (14.5 oz can)lentils = 1 cup dried, washedcumin seed = groundlasagna noodles = 5 or 6
Makes 4 servings.
preheat oven to 350.
saute onion and garlic in oil.
In same pan add the tomatoes, lentils, paste, cumin pepper, cayenne and 1 cup of water. bring to a boil. reduce heat and simmer, covered until lentils are tender, about 30-35 minutes.
Spray a 9inch square pan with cooking spray. spread one-quarter of the lentil mixture, top with one-third the noodles and one third ricotta. repeat layers, ending with the lentil mixture. sprinkle parmesan. bake covered, 25 minutes. uncover and bake until cheese is golden, about 10 more min. let stand for 10 min.
