Quinoa Salad

Ingredients
1 cup dry Quinoa1/2 cup Black Beans, drained and rinsed1/2 cup Yellow Corn, fresh or frozen1/4 cup Fresh Cilantro, chopped1/4 cup Fresh Parsley, chopped1/2 cup fresh squeezed lime juice1 tbsp Olive Oil (optional)1/4 tsp kosher salt (optional)1. Cook Quinoa according to package directions.2. Scoop cooked Quinoa into a bowl and add remaining ingredients. Mix well. Season to taste. 3. Serve chilled or room temperature. The Quinoa will dry out, so keep some lime juice ready to refreshen it if needed.
