Hamburger Stew

Ingredients
.5 lb lean ground beef1 medium onion, chopped1 28oz can diced tomatoes1 can mushrooms, drained2 tsp crushed garlic
Directions
Drain the water from the mushrooms into a non-stick frying pan, add some of the liquid from the diced tomatoes, cover and cook the onions on medium-low heat, until onions are translucent (about 10 minutes). Add more tomato juice if needed, to prevent sticking. If there's a lot of liquid leftover, drain most of it from the pan. Add ground beef and garlic, fry until cooked. Add remaining tomatoes and liquid. Simmer on low heat for at least an hour, longer improves flavour.

Serve over rice or pasta, season to taste.

This recipe freezes easily.
