Chicken Masala with Vegetables (1 cup serving)

Ingredients
3 Chicken breasts trimmedEggplantZucchini, in large chunksOnion, in large chunks1 can Garbanzo beansRed Bell Peppers, in large chunks1 jar Trader Joe's Masala Simmer SauceCilantro0% Greek yogurt
Directions
Peel and cut eggplant in large chunks. Salt and let sit for 30 min. Rinse. Brown chicken cut in chunks in a little olive oil. When beginning to brown, add onion. Sautee for 5 minutes, until onions soft. Add other vegetable. Sautee for 3 minutes. Add chickpeas and simmer sauce. Simmer for 30 minutes. Serve over rice and top with 1-2Tbsp Greek yogurt and cilantro.
