Orzo, Mediterranean Style

Ingredients
1 - 15-16 0z box/pkg Orzo Pasta (Brillia)1/4 c. butter/ or EVOO4 1/2 c.Low Salt Broth Vegy, Ck, or Bf1 tesp. Italian Seasoning1/2 T minced garlic2 c. chopped , Roma Tomatoes2 c. Chopped fresh spinach1/2 c, Fresh Mushrooms, chopped1/2 c. Feta Cheese1 small can black olives
Directions
Melt butter/ or heat EVOO in a large skillet. Stir in Oroz over medium heat until lightly browned.
Add broth choice, Italian seasonings, and garlic.
Cook, and stir for 10 min.
Add Tomatoes, mushrooms and Spinach to above.
Just prior to serving add olives and feta cheese, stir in. Serve.

    This taste very good especially with fish but the nutritional value listed on this recipe is WAY OFF. Think 300 calories and 10 grams of fat. - 3/14/07
