Chicken with rice and Pad-Thai Sauce

2 garlic cloves chopped3 scallions2 tbs olive oil2 boneless, skinless chicken breasts cut into strips1 small bunch of broccoli1 red pepper3 tbsp Pad-Thai Sauce1/2 cup Brown rice
1.) Chop garlic and scallions
2.) Preheat olive oil in large skillet over medium high heat
3.) Add garlic and scallions to skillet and saute for about two minutes
4.) While garlic and scallions are cooking, cut the chicken breasts into strips, about 1-1 1/2 inch strips.
5.) Add the chicken to the garlic and scallions and cook, stirring frequently until chicken is done, about 5-10 minutes.
6.) Remove chicken and add broccoli, peppers and mushrooms to the pan. Saute for a few minutes, until vegetables are slightly soft.
7.) Add chicken back into the pan and add the Pad-Thai sauce, stir until the vegetables and chicken are coated.
8.) Cover the pan and let the mixture steam for a few minutes.
9.) Serve over brown rice or your rice of choice.
