8 oz chicken2 cans diced or stewed tomatoes no salt1 small can sliced mushroomsminced garlicslice zuchini squash (thin)fresh spinach leaves1.5 cups raw onions8 oz dry whole wheat pasta (1/2 of box)1/2 cup of water
cook chicken in pan sprayed with Pam, set aside.
heat oil in pan, saute garlic, onions, and zuchini til tender
add canned tomatoes, chicken and water simmer for 10 minutes, add fresh spinach simmer 5 more minutes.
serve over cooked pasta.
