Quinoa Dill Salad

Ingredients
1 cup cooked quinoa1 tsp Extra Virgin Olive Oil2 tbsp apple cider vinegar2 tbsp chopped red onion1/4 tsp dried dill or 2 tbsp fresh1/4 tsp garlic powder1/4 cup feta cheese1/4 cup tomatocracked pepper (opt)
Directions
Serving Size: 1

1. Mix EVOO, vinegar, dill & some cracked pepper in a bowl
2. Add quinoa, mix
3. Add tomatoes, mix
4. Add cheese, mix
5. Serve immediately OR let it chill overnight

You can other veggies like olives, artichoke hearts, peppers, etc if you'd like.
