Pesto Chicken Salad

Ingredients

3oz chicken breast (precooked)1/2c cucumbers1/4c red bell peppers1/4c shredded carrots1/8c chopped nuts (almonds, wallnuts)1/8c raisins2tbs reduced fat mayo1tbs pesto saucesalt and pepper
Shred or cube the chicken breast into bite size pieces and place in a mixing bowl.
Chop all the vegtables and nuts and add to the chicken. Also add the raisins to the bowl.
In a seperate bowl mix together the mayo and pesto until well combined.
Pour the mixture onto the chicken and vegtables and toss together untill the salad is evenly coated.Season with salt and pepper to your liking.
Serve either on crakers, and piece of bread or on a bed of lettuce. Enjoy.
