Spinach Salad with Turkey Bacon Dressing

Salad:8 cups fresh spinach1/4 cup grape tomatoes (halved)1/2 cup sliced red onion1 cup bell pepper strips1/2 cup cucumberDressing:4 Turkey bacon strips3 tbsp Red wine Vinegar1tsp Dijon mustard1 tsp sugarpepper and salt to taste
1. Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
2. Fry the bacon and remove to a paper towel to drain. Crumble the bacon and set aside.
3. Whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
4. Toss in salad ingredients. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls. Serve immediately.
