Thick Courgette/Zucchini Soup

Ingredients
4 large courgettes/Zucchini, washed and peeled.1 large onion.1 carrot, wash and peeled.1 turnip, washed.1 low-fat beef or vegetable bouillon cube.
Directions
Wash, peel and cut the vegetables into large pieces.
Put in a tall pan with the low-fat bouillon cube and cover with water.
Cook for 20 - 30 minutes.
Puree using a blender to obtain a thick, smooth soup.
Serve hot.

    I love this soup, tasty and totally low fat and I use it with drier low-fat proteins like low-fat roasts and poultry breast, and it is great with the daily Dukan oat bran as well.
