Chicken Sausage, Peppers, and Onions Recipe

Ingredients
4 Aidells Chicken and Apple Smoked sausage links2 Tbsp olive oil1 green bell pepper, sliced into long strips1 red bell pepper, sliced into long strips1 yellow bell pepper, sliced into strips4 garlic cloves, sliced1 large sweet or yellow onion, sliced1 small (15 ounce) can of crushed or diced tomatoes1 Tbsp of dried oregano1 Tbsp of dried parsley1/2 cup red wine1/2 teaspoon red pepper flakesSalt to taste
Directions
Heat the olive oil. Brown the chiken sausage on all sides. When the sausages are browned, remove from the pan and set aside. Add the Onions and Peppers. Making sure to coat with the oil in the pan, cook until soft. Next, add the garlic and cook for an additional minute. Add the red wine, letting it reduce a bit, then add the tomatoes, oregano, parsley and crushed red pepper flakes. Add the sausages; bring to a simmer then reduce the heat. Cover and simmer for about 20 minutes.

Serve over your favorite pasta (I used capellini).
