Gluten free Pumpkin Spice Muffins

Ingredients
1/4 Cup Shortening1/2 Cup Sugar3/4 Cup Cornstarch1/2 Cup Potato Starch1/2 Cup Milk3/4 Cup Pumpkin1 Egg2 tsp Baking Powder1/4 tsp Baking Soda1/2 tsp Salt1/2 tsp Ground Cinnamon1/4 tsp Ground Nutmeg1/4 tsp Ground Gingerscant 1/2 tsp Xanthan Gum for topping: 1-2 Tbsp sugar
Directions
Preheat the oven to 350 degrees. In medium bowl combine the sugar and shortening until it is light and fluffy. Add the remaining ingredients and mix well. Be sure to remove any lumps from the batter. Fill greased muffin tins about 2/3 full. Sprinkle sugar over the top of each muffin.

Bake 18-20 minutes until toothpick inserted in muffin comes out clean and the tops no longer look wet.
