Garlic, 2 cloves, thinly sliced (remove)Olive Oil, 2 tbsp (remove)Parmesan Cheese, grated, .25 cup (remove)Basil, 2 tbsp, finely chopped (remove) optionalParsley, 1 tbsp, finely chopped (remove) optionalBroccoli, fresh, 4 cup, chopped into 1-2" pieces (remove)Barilla Mini Penne, 32 oz (remove)Salt, 1 tsp (remove) optionalPepper, black, 1 tsp (remove)
To a large pot of boiling salted water cook broccoli which has been cut into 1-2 inch pieces until fork tender, remove from water with a slotted spoon and place in a large bowl. Next add pasta to the broccoli water and cook until tender. Drain pasta into colander and discard water. Add pasta to the broccoli bowl and mix gently. In a small skillet add 2 Tbsp olive oil and heat gently until warm. Add thinly sliced garlic and allow the garlic to perfume the oil as it gently simmers in the oil. Do not brown the garlic. Next add the garlicky oil to the pasta broccoli mixture and gently mix. You may add Parmesan cheese at this time or serve it on the side. Salt & pepper to taste. Garnish with finely chopped basil or parsley. Serves 8 (1/2 cup) servings.
